Black Wheat Soup or familiarly called Zurek is a fermented soup then filled with chunks of potato, sausage, boiled egg, and parsley. This soup has a sour taste but is very fresh and is usually served with ham, ribs, or bacon.

  • 300 grams of cooked sausage, cut into pieces
  • 200 grams of meat
  • 100 grams of mushrooms
  • 100 grams of onions
  • 600 ml water
  • 500 ml sourdough rye
  • 500 ml sour cream
  • 5 potatoes
  • 3 cloves of garlic
  • 2 boiled eggs
  • 1 carrot
  • Marjoram, parsley, and bay leaf to taste
  • salt and pepper
  1. Mix flour with some cold water, let stand, and store for a few days.

  2. Saute onions in butter, add mushrooms, sour cream, and broth. Let the soup boil and simmer for about 20 minutes over low heat, stirring occasionally. Add potatoes, carrots, meat, and sausage and cook until tender. Before serving, add the hard-boiled eggs to the soup.
